I must admit that, like many of us, I long to shake off the limitations and restrictions of having a physical body. I yearn to fly free in the higher densities, dancing and twirling as an expression of the boundless soul that I am.

When I woke up, I began to feel this freedom in my everyday life, every time I closed my eyes and let go. The contrast between unleashing my soul and squeezing it back into my dense, physical body was a total mismatch. I just couldn’t squash my soul back in! So, I immediately embarked upon a journey to find a way that my soul could thrive whilst still having a physical body…

Eating Consciously has the power to reconnect us to the Universal Flow.

No matter what crazy things are going on in life, when I enter my kitchen, it’s a haven of peace. It’s my sanctuary from the ‘storm’, whatever what is going on in the crazy world ‘out there’. It’s my heartfelt expression of culinary alchemy. It brings me so much joy to see which ingredients want to dance together to create a recipe. Nothing is ever the same twice, most especially when I make no-bake sweet treats. It’s like a mystery that unfolds as I dance from one ingredient to the next.

Raw or no-bake treats have been something I’ve relished since the beginning of my conscious kitchen journey. I take great joy in knowing that each little morsel nourishes my mind, body and soul in some beneficial way. The recipe that I am sharing today is enriched with the blissful properties of coconut, sweetened with dates. It’s naturally gluten-free, totally plant-based and incredibly delectable. Like so many of my recipes, I first created this when catering for a group of beautiful souls on retreat. The response was priceless!

Its so easy to take carrots for granted. We all know that carrots are good for us; the carrot is arguably the most popular vegetable in the modern world, and it certainly does deserve a place in our daily cuisine. This article explores why. We’ll also bust a commonly held carrot myth or two along the way, whilst offering a delicious list of my favourite, easy, super-healthy recipe ideas, to inspire your carrot culinary adventures.

Carrots come in the orange, yellow, purple, white and red varieties, all with impressive health benefits. The original orange coloured carrots, with their sweet, earthy flavour, are thought to have come out of The Netherlands in the 16th century. These tasty root vegetables (along with parsnips, fennel, parsley, caraway and dill) belong to the Umbelliferaefamily (called so, because of the the umbrella-like flower clusters, that plants in this family produce).

I’ve just returned from a wonderful trip to Vancouver Island with my husband. We were working with the most beautiful group on retreat and my role was to provide nourishing, conscious cuisine all week long. I was in my element doing what stirs my soul. It was all quite magical.

And then there was the long haul travel. Definitely not my forte! Hits me like a sledge hammer; sending me into an ungrounded, confused spin as my body clock turned right around to the other side of the globe. Being cramped in a seat, surrounded by 300 other people, breathing recycled air for 10 hours didn’t do any favours either. Upon arrival we quickly tracked down a conscious cafe that sold freshly pressed organic juices. There is nothing quite like a fresh veggie juice to revitalise a tired and worn body. This type of thing can work wonders. It gives the body a rapid infusion of support and helps to balance you back out again. I grabbed fresh organic juices along the way, wherever they were available.

Sometimes all you need is a simple biscuit, so I came up with a tasty little treat. The delicate hint of warming spices entwines softly with a playful infusion of lemon and orange zest; whilst the date that sweetens this biscuit balances and brings the best out in everything. Spelt works well in this recipe as a nutritionally superior and healthier alternative to its distant hybridised cousin wheat. I also negate the need for diary by using organic coconut butter, making for a well rounded, healthy, sweet treat.

I use mixed spice in this recipe, which is a blend of warming, sweet spices commonly used in Britain that typically includes cinnamon, ginger, nutmeg, allspice and cloves. I’ve heard that it is similar to pumpkin pie spice used in Northern America. If you can’t find mixed spice, then just make something up of a similar ilk.

It works in two ways…

I’ve noticed that whenever I drink fresh, organic vegetable juice my energy levels go through the ceiling. I feel energised and vibrant; so much so, that I’ve incorporated vegetable juicing into my weekly rhythm as a general health and wellness tonic.

Macadamia nut & cocoa are a marriage made in chocolate heaven. Add in fruit (in this case – raisins), coconut sugar (a much healthier alternative to refined sugar) and vanilla and you’ll quickly find a divine medley of exciting textures, flavours and melt in the mouth deliciousness.

Macadamias are my favourite nut ever.
